GRAIN FREE Red Lobster cheese and garlic Biscuits

Grain-Free Red Lobster Biscuits

Modified from the Satisfying Eats Cookbook

Makes about 9 small biscuits or 6 medium biscuits

1 small biscuit: 100 calories, 8 grams of Fat, 1 Net Carb & 3.5 grams of Protein

1/4 cup blanched almond flour (I use Bob’s Red Mill)
2 tbsp coconut flour (I use Bob’s Red Mill)
1 tsp baking powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 cup fresh grated Parmesan cheese
1/4 cup heavy cream (or pure sour cream, I use sour cream now)
1 egg, cold
1/2 cup sharp cheddar cheese, grated (around 1 oz)
2 tbsp butter, softened (I used salted)

**Finish with Salted butter & dried or fresh parsley

Directions

Preheat oven to 350 degrees F.  In a medium bowl, mix dry ingredients. Then add remaining ingredients and mix with a wooden spoon or spatula until well blended.  Use scoop to scoop out dough onto un-greased cookie sheet lined with parchment paper .  Space 2-3 inches a part. Bake for 13-15 minutes for small biscuits and 20 minutes for medium biscuits.  Once out of oven, smear a bit of salted butter and sprinkle with a little parsley. Best served warm.

I made these without the Parmesan Cheese last night, just added a little more of each of the flours to make up the difference. They were wonderful! 

PS Yall better make these!
I bought the coconut and almond stuff just for these and it’s worth every penny, I promise.

Low Carb Breakfast Casserole

Brown 1 pound good sausage in frying pan, drain

1/2 cup onion, chopped

1/2 cup bell pepper,chopped

6 eggs,beat with fork or wire wisk

1 cup half & half

1/2 cup water

2 cups cheese, Grated,use your fave

(I used 1 cup Mexican taco cheese & 1 cup mozarella)

I just brown the sausage, drain it.

put it in the bottom of a greased casserole dish.

spread the onions & peppers over it.(I sautéd mine a tiny bit, but you don’t have to)

mix all the eggs, half & half, water and cheese together.

pour over meat.

bake at 350 for 45 -60 minutes.

 Mixing the cheese into the eggs makes this so much better than just sprinkling it over the top.

This casserole lasted us 3 days. We just sliced some and reheated in microwave when ever we wanted. It’s good at room temperature.

Low Carb Mexican Chocolate Coffee Cake

Ingredients:

6 Eggs
½ cup Extra Virgin Coconut Oil, melted
1/3 cup + 1 Tbsp Coconut Flour
1/3 cup Cacao Powder
3 oz Unsweetened Chocolate, melted (100%)
½ cup Blackstrap Molasses
½ cup Honey
2 tsp Vanilla Extract
½ tsp Salt
½ tsp Baking Soda
1 tsp Ground Cinnamon
½ tsp Cayenne Pepper, to taste

Directions

1. Preheat oven to 325F. Line 5”X9” loaf pan with wax paper. Grease wax paper with coconut oil.
2. Sift cocoa, coconut flour, cinnamon, cayenne, salt and baking soda into a small bowl.
3. In a food processor or blender, combine eggs, honey, molasses, and vanilla. Pulse a few times to beat together. Add melted coconut oil and chocolate and process/blend for 1 minute.
4. Add dry ingredients to food processor, and pulse to combine.
5. Pour batter into prepared loaf pan and bake for 1 hour (not a very forgiving cake if you burn it, so you might want to test for doneness with a toothpick at the 55 minute mark).
6. Let cool completely in the pan. Remove from pan and carefully remove wax paper.
