Homemade Marshamallows

Vegetarian Marshmallows

(from U of Indiana)

This recipe uses agar agar, which is vegetarian, instead of gelatin. If you want to use gelatin, use 4t of gelatin for every 1 t of agar agar (2T for this recipe).

Finally, my boys can have marshmallow treats… and they’re better than store bought! Substitute vanilla with candy oils (peppermint is my favorite) and add food coloring for a nice touch. You can make whatever shapes you want: I like snowflakes for Christmas! They keep for over a week in Tupperware. The longer you have them, the crunchier they get, making them perfect for hot cocoa.

1 1/2 t. agar

1 t. pure vanilla extract

1 1/2 C sugar vegetable-oil cooking spray

2/3 C light corn syrup

1/8 t. salt corn starch

Coat a 12 x 17 inch rimmed baking sheet with cooking spray. Set aside.

Place 1/3 C cold water into bowl of electric mixer. Sprinkle with agar agar. Let mixture soften for 5 minutes.

Place sugar, corn syrup, salt and 1/3 C water in small to medium saucepan (if you use to large of a saucepan, the thermometer will not be covered by mixture). Cover. Bring to a boil. Remove lid. Cook, swirling occasionally until syrup reaches 238 degrees (soft ball stage) (~5 minutes).

With mixer on low speed, whisk agar mixture while slowly adding syrup in a steady stream down the side of the bowl. Gradually increase mixer to high. Beat until mixture is thick, white and has almost tripled in volume (~ 12 minutes). Add vanilla (or other flavoring/food coloring) and beat 30 seconds more.

Pour mixture into baking sheet and smooth with spatula sprayed with cooking oil. Let sit (uncovered) overnight.

Cut out with cookie cutters or cut with kitchen scissors, sprayed with cooking oil. Roll marshmallows in corn starch to keep them from sticking to each other. Store in air tight container, with wax paper between layers.

Please Don’t Use Lysol!

You may find that a strange thing for a healthcare professional to say, but at this time of the year I need to remind people that if you have babies, small children, animals, that lysol products will do a lot of harm to babies, children, animals, elderly, people with inflammation/ auto-immune, chemotherapy patients, diseases, lupes, RA, MS, and cancer patients. Even if your cancer is in remission it is advisable not to use Lysol products.

Easiest way to explain it; Lysol is meant to kill live cells. Well a live cell or organism on the floor, or in the air, is the same live cells that we are made up of.

It has become the cause of many chronic respiratory problems in your children, cancer patients, puppies, small dogs, and so on.

So, Lysol kills live cells and anything living!

Sweet Potato Fudge

Sweet Potato Fudge

2 cups sweet potato, cooked and puree

1/2 cup raw, unsweetened, shredded coconut

1/2 cup coconut oil, gently melted

1/2 cup cocoa powder

1 tsp vanilla

dash of sea salt

Blend all ingredients together in a food processor.

Line an 8×8 casserole dish with parchment paper or wax paper.

Press fudge into pan.

Sprinkle shredded coconut over fudge and press into place with the back of a spoon.

Place in the fridge for 1 hour to set.

Cut into squares.

This recipe is also good with one walnut or pecan pressed into each square before it sets.

Top Five Warning Signs That Your Young Adult Might be in Trouble

Top Five Warning Signs that

Your Child/ Young Adult is in Trouble

 

What causes people to make choices that could destroy their future, and why do they give

in to peer pressure? Could your child be headed down a dangerous path? Heed the

following warning signs:

 #1 warning sign: Isolates from the family.

 

If your once social child/ adult  starts spending an inordinate amount of time away

from home or locked in his or her room, this is a red flag. If your child/young adult  starts withdrawing from you or your spouse, there’s a reason. As a parent, it’s your responsibility to identify what’s behind the change.

 

 

 

 

#2 warning sign: An extreme shift in mood.

 

Is your child/ young adult  garrulous and friendly one moment, then taciturn and angry the

next? Don’t just chalk it up to growing pains.  he or she may be hanging out with the wrong crowd,

or experiencing changes — hormonally, neurologically or socially.

One thing to do is not to let it just go, because they get bigger, they get stronger,

they get more rebellious. It’s never too late.

 

 #3 warning sign: He or she starts abusing drugs or alcohol.

 

Young adults often start experimenting with drugs and/or alcohol unbeknownst to their folks.

If you suspect your child is using drugs, know the signs to look for.

 

 #4 warning sign: Family history of alcoholism and drug abuse.

 

There clearly is a higher incidence with teens if they’ve had this history in their family.

Maybe it’s genetic; maybe it’s not. Maybe it’s just that the modeling is there.

 

 #5 warning sign: Taking risks.

 

Don’t chalk your young adult truancy, vandalism or petty theft up to boys being boys, or kids never grow up. When your family member just seems to throw caution to the wind, not care about consequences — all around bad sign, It indicates a number of things, one of which is that they don’t have the ability to connect their choices with their consequences.

 

Other

warning signs to look out for:

 

Declining grades, using street or drug language, a diminished interest in hobbies and a

lack of appreciation for family values.

 

You can’t be in denial about what’s going on. Don’t kid yourself that these bad

things just happen to other people’s kids. Know what’s going on with your

child. Make sure they understand the consequences of their actions.

Make sure they’re living consistent with the values you hold so important.

Just Beets

Beets….For a long time I was completely turned off of beets as I only thought of them at Christmas and Thanksgiving dinners and their sour, pickly taste that I despised so much as a kid. Now that I have finally given them another go, but this time in roasted, shredded or juiced format, I think that they are absolutely amazing and I am disappointed that I didn’t give them another chance sooner! Beets have a mildly sweet, extremely earthy taste to them and they are LOADED with antioxidants and many other nutrients that can be extremely beneficial to your health.

Beets come in many different varieties including the most popular: the red beet. This is the one that you would most often see at family dinners in their sour pickly form. Beets also come in other varieties such as: Golden, Yellow, Chioggia, Cylindra and the very popular beet, the sugar beet. You can find beets in practically any grocery store in their whole form (edible leaves included) or sliced and canned, or pickled and jarred. Beets may not be something you really think about eating very often, or-never, but once you have read about all of the amazing benefits these little vegetables contain, I’m sure you will consider finding ways to incorporate them into your diet more often.

1.Beets have no trans fats and no saturated fats, and are quite filling.

2.Beets contain a high source of folic acid, which is a b vitamin that helps the body to regenerate new cells.

3.Beets are very rich in carbohydrates, which can provide a lot of energy.

4.Studies have shown that consuming beets can protect against certain cancers, especially colon cancer.

5.Beets contain high sources of magnesium, sodium, potassium and vitamin C.

6.The leaves from beets are edible as well and contain many of the same benefits. Beet leaves also are known to combat ‘garlic breath.’

7.Studies have shown that beets are also capable of protecting against heart disease, the number one cause of death in the United States.

8.Beets contain high amounts of boron. Boron is related to the production of human sex hormones, which is why the ancient Romans consumed beets for the purpose of their aphrodisiac effect.

9.Beets cleanse the body and purify blood.

10.Beets contain the same chemical that is used to combat depression Trimethylglycine. If you’re feeling down why not treat yourself to a beet salad? It might just make you feel better.

How can you start to incorporate beets into your diet?

There are many ways that beets can be eaten: raw, shredded, sliced, pickled, roasted, boiled, steamed and juiced. Be careful when preparing them though, well at least the red ones, because their color is so strong that it will stain your hands, clothes and potentially your cutting board! To remove beet juice from your skin, just rub your hands with a little bit of lemon juice. Keep in mind that it is important to be purchasing organic beets, as beets along with all other root vegetables readily absorb the pesticides from the soil from which they are grown. Beets definitely deserve to get some more attention! Be sure to share some of these amazing benefits of beets with your friends and family!

Winter Squash is a highly nutritious and alkaline food which

as tryptophan which helps to promote a healthy night’s sleep.

 

This may sound boring, compared to all the foods out at this time of year, but remember, it is some of the best fuel for your body.

Almond Snowball Cookies

Almond Snowball Cookies

Ingredients

2 egg whites

Pinch coarse salt

1/3 cup sugar, eyeball it

1 1/2 cups, about 6 ounces, shredded coconut

1 teaspoon almond extract, eyeball it

1/4 teaspoon grated or ground nutmeg

3 tablespoons all-purpose flour

9 candied red cherries, halved

1/4 cup sliced almonds

Directions

Preheat oven to 350 degrees F.

In a mixing bowl, beat egg whites and salt to soft peaks, then add sugar and beat again until peaks are stiff. Beat in almond flavoring. Using a rubber spatula or wooden spoon, stir in half of the coconut. Sprinkle in the nutmeg and flour, stir, then fold in the remaining coconut.

Using a melon baller or other small scoop, or working with 2 spoons, form 9 “snowballs” a couple of inches apart on each of 2 cookie sheets. Bake snowballs 12 to 15 minutes, until lightly golden. Remove from oven and garnish each snowball with half a cherry and a couple of slivered almonds. Transfer to a rack or serving plate to cool.

***  I would try using coconut or rice flour instead of all purpose, or truvia instead if white sugar.

Flourless Peanut Butter Cookie

Flourless Peanut Butter Cookies

Ingredients

1 cup natural peanut butter

1 cup sugar

1 teaspoon pure vanilla extract

1 large egg, lightly beaten

Coarse sea salt, for sprinkling

Directions

Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven.

In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.

Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough

I would substitute truvia, or splenda for baking, instead of sugar.

Roasted Beet and Goat Cheese Herbs

Roasted Beets with Goat Cheese and Herbs

6 beets, about 1 1/2 lb. total weight, greens removed*

1 tsp. chopped fresh thyme

1 tsp. chopped fresh chives

2 Tbsp. extra-virgin olive oil

Salt and freshly ground pepper

2 oz. fresh goat cheese, crumbled

Directions

Preheat the oven to 400° F.

Wrap the beets individually in aluminum foil and roast until tender when pierced with a fork, about 1 hour depending on their size.

When cool, peel and quarter the beets and place in a serving bowl.

In a separate bowl, mix together the thyme, chives and olive oil. Drizzle the olive oil-herb mixture over the beets, season with salt and pepper, and top with the crumbled goat cheese. Serve right away. Serves 4.

*Don’t throw out those beet greens! They are delicious stir-fried, sautéed or braised.

Remember that beets naturally lower your blood pressure!
