Slow Cooker White Cheddar Broccoli Mac & Cheese

Ingredients

1 1/2 cups milk

2 egg whites

2 teaspoons cornstarch or tapioca starch

1/8 teaspoon nutmeg

1 cup grated white cheddar cheese

1 small head of broccoli, cut into bite-sized florets

2 cups dry, whole wheat pasta

( taste good with angel hair and bacon crumbled)

 

Directions

Whisk together the milk, egg whites, and cornstarch in your slow cooker insert. Be sure to whisk well.

Stir in the grated cheese, broccoli and pasta shells.

Cook on low for 1-1/2 to 2 hours.

After the first hour, stir the food on a semi-regular basis (about every 15 minutes or so). This will do two things. It will allow the pasta to cook evenly. It will also allow you to keep any eye on the pasta and see when it’s done.

Every slow cooker is different, so the timing for this recipe may be slightly different on this for you. Pasta goes from “cooked” to “mush” very quickly. So be sure to keep stirring on occasion to keep an eye on things.

Slow Cooker Spicy Barbecued Chicken

Ingredients

8 drumsticks, skin removed (optional, 3 split breasts or 6 thighs)

Barbecue Sauce

1 tablespoon canola oil

1 sweet onion, finely diced

1 clove garlic, minced

1 (8 ounce) can tomato sauce

1/4 cup honey

1/4 cup balsamic vinegar (use white balsamic vinegar for gluten free)

1 teaspoon Dijon mustard

1 tablespoon Red Hot Sauce, ‘Frank’s Red Hot’ was used in this recipe

1/2 teaspoon cayenne pepper

2 teaspoons chili powder

Sea Salt to taste

 

Spice Rub

1 teaspoon chipotle chile pepper

1 teaspoon dried oregano

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon ground mustard

1 teaspoon paprika

1 teaspoon black pepper

1 teaspoon cayenne pepper

Sea Salt to taste

 

Directions

 

In a medium sauce pan add canola oil, turn to medium-low heat and saute onion and garlic until tender, about 5 minutes. Add the remaining barbecue sauce ingredients, stir and simmer until sauce has thickened, about 30 minutes. While the sauce is cooking down, combine spice rub and coat all sides of drumsticks.

After sauce has cooked down and thickened, place drumsticks in the slow cooker, pour barbecue sauce over and ensure all drumsticks are covered. Cover, turn to high and cook approximately 3 hours or until cooked through. Or, turn slow cooker to low and cook 5-6 hours.

Slow Cooker Eggplant Lasagna

 

Ingredients

 

2 eggplants, peeled and sliced thin to resemble lasagna noodles

1 cup low fat cottage cheese

1 1/2 cups low fat mozzarella cheese*

* I use ricotta.  Before you use ricotta, mix in one egg and parsley, stir)

1 egg

1 (24 ounce) jar sugar-free spaghetti sauce

1 teaspoon kosher salt

1/2 teaspoon pepper

1 bell pepper, diced

1 onion, diced

 

Directions

Lay the eggplants out on paper towels and sprinkle with salt and pepper, and allow excess moisture in eggplants to drain for 15 minutes. Meanwhile, combine the cottage cheese, mozzarella cheese and egg in a bowl.

Cover the bottom of the slow cooker with ¼ of the tomato sauce. Layer ¼ the eggplant slices, peppers, onions and cheese on top. Repeat the layer three more times (layering is as follows: sauce, eggplant, peppers, onions cheese).

Cook on low for 5 to 6 hours or high for 2 to 3 hours.
