Word of warning: these cinnamon lemon coconut bliss balls are ever so slightly addictive. But that’s alright because each one has just under 100 calories and only 3 grams of sugar, so you can use your own best judgment on when to indulge.

Want to know the key to keeping the sugar so low? The unusual but delicious pairing of cinnamon and lemon zest. If you love lemon and cinnamon and you’ve never tried this combo before, you’ll be hooked!

In addition to being low in sugar, they’re also a good source of heart-healthy mono and polyunsaturated fats. Plus, they’re super easy to make? The hardest part is zesting the lemon, but you can still be noshing in under 10 minutes flat—perfect when you’re craving a little something sweet!​

Ingredients

  • 2 cups fine almond flour
  • ¼ cup pure maple syrup
  • 2 tablespoons almond oil
  • 2 teaspoons lemon zest, or to taste
  • 1 teaspoon ground cinnamon, or to taste
  • ¼ teaspoon sea salt or table salt
  • ¼ cup shredded unsweetened coconut ​

Preparation

  1. Combine almond flour, maple syrup, almond oil, lemon zest, cinnamon, and salt in a food processor bowl. Process until mixture is well combined and slightly sticky.
  2. Line a large plate or small baking sheet with plastic wrap and divide dough into 20 pieces. Roll each piece into a ball.
  3. Place shredded coconut on a small plate and roll each ball in the coconut, then return to plate or baking sheet. May serve immediately or store covered in refrigerator until ready to eat

Ingredient Variations and Substitutions

You may substitute the almond oil for any neutral tasting vegetable oil or liquid coconut oil. Feel free to add additional lemon zest and coconut if desired. Start with recommended amounts, then add more as needed.

Cooking and Serving Tips

You can make a big batch of these and store them in a well-sealed container in the freezer. Enjoy them frozen, or thaw them out a little in the refrigerator before serving. These bliss balls are perfect for dessert or an afternoon treat with a cup of tea.

“MCTs” are medium-chain triglycerides, a form of saturated fatty acid that has numerous health benefits, ranging from improved cognitive function to better weight management. Coconut oil is one great source of MCTs — roughly 62 percent to 65 percent of the fatty acids in coconut oil are MCTs — but recently more concentrated “MCT oil” has also been growing in popularity.

 

MCTs, also called “MCFAs” for medium-chain fatty acids, are believed to be largely missing from the diets of people eating “standard Western” diets, most likely because the public has been led to believe that all forms of saturated fats are potentially harmful. However, recent research has shown a lot of evidence about the real truth regarding saturated fats.

 

We now know that ideally MCT oils like coconut oil should actually be consumed every day. Certain saturated fats, especially MCTs and other healthy fats found in things like coconut oil or grass-fed beef, are in fact easier to digest than long-chain triglycerides (LCTs) and might even have more benefits related to heart health, obesity prevention and brain health, too.

 

In fact, traditional populations living in tropical areas have been consuming saturated fats, including sources of MCTs like coconuts, for thousands of years without any ill effects — so consider the idea that a low-fat diet is “healthy” to be one of the biggest nutrition lies there ever was!

 

Aside from coconut oil, smaller amounts of MCTs can also be found in certain other foods with saturated fats, including butter (especially butter from grass-fed cows), cheeses, palm oil, whole milk and full-fat yogurt.  Dairy products in the United States do not have MCT’s in them.

 

Caution: Palm oil is a controversial source of MCTs, not because it’s bad for your body, but because there are major issues involved in the process of procuring this oil. These include deforestation, loss of wildlife diversity and unethical treatment of workers. That’s why I only recommend RSPO-certified palm oil, which comes from producers who prioritize sustainability practices.

 

What Makes MCT Oils So Special?

MCTs get their name because of the length of their chemical structure. All types of fatty acids are made up of strings of connected carbon and hydrogen. Fats are categorized by how many carbons they have: short-chain fats (like butyric acid) have fewer than six carbons, medium-chain fats have between six to 12 carbons and long-chain fats (like omega-3s) have between 13–21.

 

What makes MCTs a top source of essential healthy fats? Medium-chain fats are digested easily and sent directly to your liver, where they have a thermogenic effect and the ability to positively alter your metabolism. This is one reason why many people claim that MCTs, including coconut oil, are burned by the body for energy, or “fuel,” instead of being stored as fat.

 

Compared to longer-chain fats, MCTs are absorbed more easily since there’s less work for the body to do breaking apart carbon bonds. MCTs are smaller, so they can permeate our cell membranes more easily and don’t require that we use special enzymes in order for our bodies to utilize them.

 

MCTs and saturated fats are good for you in other ways, too: They reduce the risks of low-fat diets, and they’re supportive of your gut environment, especially since they have the capability to combat harmful bacteria, viruses, fungi and parasites. Additionally, MCTs contain antioxidant properties, which is why coconut oil has far-reaching inflammatory benefits that have led it to be used to treat dozens of health problems in folk medicine for centuries.

 

 

MCT Oil Nutrition Facts

There are actually a few different forms of MCT oils, some that are likely more effective than others. The four different kinds of MCTs include caprioc (acid C6:0), caprylic (acid C8:0), capric (acid C10:0) and lauric (acid C12:0) acids. Generally speaking, the shorter the chain (meaning the lower the number of carbons the acid has), the faster the body can turn the fatty acids into usable energy, in ketone form. Ketones are what the body produces when it’s using fat for energy instead of glucose.

 

Regardless of the exact kind of MCT, all are still beneficial for overall health — especially for people who have a difficult time digesting other forms of fats, including anyone with malabsorption problems, digestive disorders like leaky gut syndrome, Crohn’s disease, gallbladder infections and so on.

Berries and Coconut Whip Cream

Gluten free

Ingredients:

 

1 cup blueberries

1 cup blackberries

1 cup raspberries

1 cup strawberries

2 x 13.5-ounce cans full-fat coconut milk, refrigerated

¼ teaspoon grated ginger

1 teaspoon maple syrup

Lemon juice (from about ¼ lemon)

1 2-inch piece vanilla bean pod, split lengthwise

1 teaspoon lemon zest

4 leaves fresh mint, minced

Preparation:

 

Rinse the berries, mix them together, and divide them evenly into 2 bowls. Open the cans of coconut milk, being careful not to shake them. Coconut milk naturally separates in the can, leaving a thick, heavy layer on top. Scoop out the solid cream from each can and place it in a small mixing bowl. (You will need ½ cup of cream.) Discard the thin liquid that remains. Using a fork, whisk together the coconut cream, ginger, maple syrup, lemon juice, and the scraped seeds from the vanilla bean pod. Whisk until the mixture is well combined and smooth. Scoop a generous dollop of cream over the berries in each bowl. Top with the lemon zest and mint.

Betty’s Apple Ambrosia

 

You might remember ambrosia with the sugars and mini marshmallows.  Here is a much better version for you.

 

Ingredients

1 cup orange juice with lots of pulp, or more as needed

3 ripe, sweet apples, such as Red Delicious

One 8-ounce can crushed pineapple

1/2 cup frozen grated coconut, thawed

1/4 cup sugar

 

Pour the orange juice into a medium bowl. Peel and core the apples, and then grate them into the orange juice using the large-hole side of the grater. Add the pineapple, coconut and sugar. Mix well, adding more orange juice if the mixture is not juicy enough. Store in the refrigerator until ready to serve. The apples will continue to absorb juice, and orange juice can be added as needed to keep it as juicy as you like.

Homemade Coconut Milk

Coconut Milk is a wonderful alternative to pasteurized cow’s milk or to rice, soy or other processed milks. Unfortunately, the cans of most store bought versions of coconut milk are lined with BPA. New refrigerated carton varieties are somewhat better, but can be expensive and many have added sweeteners or preservatives.
Fortunately, making coconut milk at home is simple and very inexpensive. From my calculations, homemade coconut milk costs less than $1 per batch, and it can be used in smoothies, recipes, or just to drink by itself. It can also be flavored with natural vanilla, strawberries, or cocoa powder.
Coconut is packed with medium chain fatty acids and lauric acid. It has many health promoting benefits and is especially good for kids. Try this inexpensive way to make coconut milk:
Homemade Coconut Milk
Homemade coconut milk from shredded coconut for a healthy and inexpensive milk alternative.
Ingredients
· 4 cups of water
· 1.5-2 cups of unsweetened shredded coconut.
Instructions
1. Heat water, but don’t boil. It should be hot, but not scalding.
2. Put coconut in blender or Vitamix and add water. (If all water won’t fit, you can add the water in two batches.)
3. Blend on high for several minutes until thick and creamy.
4. Pour through a mesh colander first to get most of the coconut out, and then squeeze through a towel or several thicknesses of cheesecloth to get remaining pieces of coconut out.
5. If you have to split the water, put all the coconut that you strained out back in the blender, add the remaining water, and repeat.
6. Flavor options- add in after all coconut has been strained out: ½ tsp vanilla extract, ½ cup fresh or frozen strawberries, 2 tsp cocoa powder + ½ tsp vanilla.
7. Drink immediately or store in the fridge. Should be used in 3-4 days after making for best flavor and texture. Since there are no preservatives or fillers, the “cream” of the coconut milk may separate on the top if stored in the fridge. Just shake or stir before using.

Coconut Cream Custard with Tumeric

Ingredients

 

1.5 cups unsweetened shredded coconut

 

½ cup Coconut Butter

 

½ cup Coconut Oil

 

1 tsp lemon juice

 

1/2 tsp turmeric

 

1/2 cup grass-fed butter or ghee

 

Pinch of black pepper

 

20-25 drops Stevia extract optional

 

Coconut Cream Cups Instructions

 

Melt butter or ghee on low and mix in the turmeric and black pepper- stir until well combined.  This makes a turmeric liquid

Place shredded coconut, coconut butter, coconut oil, lemon juice and stevia into a food processor and blend until well mixed.

Use spoon to scoop out about 2 tbsps worth of coconut mixture and place into silicone or regular muffin liners.

Once all your muffins liners are filled, melt butter or ghee and mix in spices.

Use a spoon  again to scoop out about 1 tablespoon of turmeric liquid and pour onto your coconut cups until the coconut is completely covered. Repeat on all your coconut cups.

Place in freezer for about 20 minutes or until coconut is frozen.

Keep in fridge.

Notes: Can also use 2 tablespoons of raw, local honey or grade B maple syrup or 1 tbsp of xylitol if you don’t want to use stevia.  Honey and maple syrup do contain sugar.

 

We are always looking for ways to get more turmeric and more coconut fats into ones system.  This may be my all-time favorite way!

 

This is a ketogenic recipe in that it is extremely low-carb, is full of healthy fats and has tons of anti-oxidants and coconut fibers which are a natural prebiotic.  The good fats and fibers will provide satiety to where you will not have sugar cravings and they will reduce inflammation and improve digestive function.

 

Turmeric is one of the most powerful anti-inflammatory, anti-oxidant rich herbs known to man.  Its primary component curcumin is known to improve brain function and protect the body from a myriad of chronic diseases.

 

Mixing it with good fats such as coconut or grass-fed butter in this recipe as well as black pepper (which contains a curcumin activator called peperine) helps to maximize the overall utilization of the curcuminoids.

 

You will notice that your skin will feel softer and you will have incredible energy, less bodily pain and improved mental clarity after consuming these on a regular basis.  Enjoy!

Chocolate Bark

Chocolate Avocado Bark Recipe with Orange Zest and Almonds

 

 

Ingredients

3 cup chips (6 oz package) – chocolate chips, semisweet

1 medium – avocado

1 tablespoon – orange zest

1 tablespoon – orange juice

1 teaspoon – honey

 

Toppings:

1 tablespoon – almonds, sliced

1 tablespoon – coconut flakes

1 tablespoon – orange zest

1/4 teaspoon – sea salt

 

Directions

Preheat oven to 400 degrees. Place almonds on a roasting pan or cooking sheet and toast for 3 minutes, until lightly browned then remove from oven to cool.

While the almonds are cooling, melt the chocolate chips over a double-boiler. Once they are melted completely, stir in the avocado, orange zest, orange juice, and honey (or maple syrup). Mix thoroughly and stir constantly.

Pour the mixture onto a cookie sheet lined with parchment paper. Use a spoon to flatten and level the mixture. Sprinkle the toasted almonds, coconut shreds, additional orange zest, and sea salt over the top, pressing everything down gently with your hand or the back of a spoon.

Cool for one hour in the refrigerator then, break it apart into pieces and enjoy!
