Bacon Jalapeno Popper Quiche






Bacon Jalapeno Popper Quiche is an amazing recipe combining incredible ingredients of bacon, jalapenos, cream cheese, and cheddar cheese, for a perfect brunch!




9 inch frozen pie crust

1/2 cup cream cheese, room temperature

2 jalapenos, diced (deseed for less heat)

1 jalapeno, sliced into rounds (for top) (I mostly deseeded these as well)

3 slices bacon, cooked crisp and coarsely chopped

1/2 cup whipping cream

1/2 cup half-and-half

5 large eggs

1 teaspoon paprika


1/2 cup shredded cheddar cheese

optional-light sour cream





Preheat oven to 400 degrees F

Thaw the frozen crust for 10 minutes, then prick the crust all over the bottom and sides with a fork to make tiny holes

Bake it for 10 minutes

Remove the crust and lower the oven temperature to 350 degrees

While the crust is hot, spread the cream cheese all over the bottom as evenly as possible

Sprinkle the diced jalapenos over the cream cheese (the rounds are for garnish later on)

Put the cream and half-and-half into a small pot and put it over medium heat about 5 minutes or until tiny bubbles appear around the edges. Scald (where you bring it to just under the boiling point) until very hot, but not boiling

Beat the eggs together in a bowl

Add the hot cream mixture to the eggs, whisking constantly to combine

Add the paprika, salt and bacon

Pour into the crust and bake for 30 minutes

Remove from oven, arrange the jalapeno slices on top, sprinkle with cheese and bake until the cheese has melted and turned golden brown, about 15-20 minutes (the original recipe said 12-15 minutes, but I did closer to 20. Check at 12 minutes, every couple of minutes)

Cool slightly before serving

Optional-serve with light sour cream


Crustless Spinach Quiche


Crustless Spinach Quiche Recipe

Total Time: 40 minutes

Serves: 4


  • 1 tbspcoconut oil
  • 1 onion, chopped
  • 1 package frozen chopped spinach, thawed and drained
  • 8 eggs, beaten
  • 3 cups shredded raw cheese
  • ¼ tsp sea salt
  • 1/8 tspblack pepper


  1. Preheat oven to 350 degrees F and grease a 9 in pie pan with coconut oil
  2. Heat coconut oil, and onions over medium heat in sauce pan until onions are soft. Stir in spinach and cook until excess moisture has evaporated.
  3. In a bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and blend
  4. Scoop into pan and bake for 30 minutes.

  • 2 cups sliced asparagus
  • 6 egg whites
  • 2 whole eggs
  • 1/3 cup diced onion
  • 1/2 cup (low-fat) feta cheese, optional parmesan cheese
  • 1/2 cup diced tomatoes
  • 1/4 teaspoon black pepper
  • Kosher or sea salt to taste


Preheat oven to 350 degrees.

Combine all ingredients in a medium mixing bowl and pour into a quiche pan or 9-inch glass pie plate.

Bake at 350° for approximately 45 minutes or until filling is set.

Dandelion Quiche


Something a bit different!

Dandelion Quiche

31/2 cups dandelion greens

1/2 lb mushrooms

9 eggs

1/2 cup grated Romano


Pie shell (optional)

1 tbsp Olive Oil

1-2 cloves Garlic,


2 tbsp Parsley,

fresh, minced*

Sea Salt + Black

Pepper to your taste

‘dash’ Hot Pepper Flakes

Cook 3.5-4 cups of dandelion greens in salted boiling water

until wilted but not completely cooked.

Drain using a


Chop the dandelion

greens into bite-sized pieces.

Saute the minced

garlic in the olive oil and add the mushrooms.(this is where I add the green

onions if using)

After about 5

minutes, add the greens. (this is where I add the extras like red peppers or

sun-dried tomatoes)

This mixture is

‘ready’ when all the liquid has cooked off.

Beat 9 eggs in a bowl. Season with S+P and that dash of Hot

Pepper flakes (or your favourite seasoning)

Add the cheese. Stir.

Put the greens

mixture into the pie shell or directly into a pie or quiche pan.

Pour the eggs mix

over the greens.

Bake at 325 degrees

for about 35 minutes (or until the eggs are ‘set’)
